Scalloped Organic White Sweet Potatoes

Our local store began carrying organic white sweet potatoes. I couldn’t wait to try them …

This simple, basic recipe has become a dinner side dish favorite, and the left-overs are fantastic! Re-heated as an addition to any meal or added to home-made soup, this one’s a winner . . .

Ingredients:
1-large white organic sweet potato
1-organic carrot
2-tabs grass-fed butter
Coarse ground black pepper
Ground nutmeg
Organic dried cilantro

Use a baking dish with a lid for best results. Peel and slice the sweet potato, and cut/dice the carrot into small pieces. Start with a layer of potatoes, add a few carrots, and sprinkle lightly with nutmeg, pepper, and cilantro. Continue layering and adding spices. Cut the butter tabs into thirds and place on top, then cover and bake at 300 degrees for 45 minutes to an hour.

 

This recipe feeds 2-4, depending on the size of the potato and the hunger factor . . .
