Sweet Potatoes with Almonds and Raisins

Sweet potatoes aren’t just for the holidays! This fiber-packed, naturally sweet root vegetable is loaded with vitamins A, B, C, manganese, and potassium. Available year round and easy to prepare, this wonderfully versatile side dish is a perfect complement to any meal. Be sure to use organic ingredients whenever possible.

Ingredients:
2 – organic sweet potatoes
Organic cumin
Organic raisins
Organic raw honey
Sliced Almonds
Spray oil
Pepper

Prep:
Coat an 8” porcelain or glass baking dish with oil. Peel and slice sweet potatoes and assemble in layers. Between each layer:  Sprinkle lightly with pepper, cumin, raisins, almonds, and drizzle of honey. Cover dish and bake at 325 degrees for about 45 minutes.

Tips:
Leftovers? These freeze great! To reheat, place in lightly oiled baking dish, cover, and heat at 300 degrees for 20-25 minutes.

This recipe is a fantastic side for meat, poultry, and fish. The sweet flavor of raisins and honey combined with the warm hint of cumin ignites the taste buds.

Substitute cranberries or dates for the raisins, or pecans for the almonds – whatever you have on hand!

Layer sweet potatoes on a plate and top with your favorite steamed veggies for a nutritious and light lunch or dinner.
