Stir-Fry Zucchini

This quick and easy stir-fry is the perfect complement to any dinner. Try it on a bed of veggie quinoa, or as a meal on its own! Use ingredients you have on hand (organic, whenever possible) and keep it simple and real.  This nutritious dish comes together in minutes, and leftovers can be stored in a glass container in the fridge.

Ingredients:
1 – medium zucchini
½ chopped red bell pepper
1 – medium carrot
½ cup sliced mushrooms
¼ cup goji berries
¼ cup organic unfiltered coconut oil
Coarse black pepper
Red chili pepper flakes
Dried basil
Dried cilantro

Chop, slice, and prep all the vegetables and combine in a large bowl. Heat coconut oil in a medium skillet until hot. Add the veggies and sprinkle with pepper, basil, cilantro, and red chili flakes. Cook uncovered for 5-7 minutes, mixing occasionally. Add goji berries and stir – heat an additional 1-2 minutes.

Serve and enjoy!

 

Tips and Tweaks:
Substitute (or add) cauliflower, broccoli, bok choy, onions, etc.

Sprinkle with grated parmiggiano-reggiano cheese and fresh parsley

Serve over butter lettuce and sprinkle with sliced almonds for a delicious lunch
