Organic BBQ Ribs with Sweet Potato Wedges & Asparagus
When our local grocer began carrying organic pork ribs, I was thrilled. BBQ ribs is one of my husband’s favorite meals and now there was a healthy option. Tender, meaty, and delicious, this dinner comes together easily and is sure to become a favorite. Trust me – there won’t be any leftovers!
Ingredients:
Organic Pork Ribs
Organic white sweet potato
Fresh asparagus spears
Coarse black pepper
Pink Himalayan Salt
Organic dried cilantro
Dried red chili pepper flakes
Organic paprika
Organic EEVO
BBQ sauce
Preheat oven to 325 degrees. Place the ribs on a baking sheet and sprinkle with pepper, cilantro, and red chili flakes. Cover tightly with foil. Cut the sweet potato in half, then slice/cut into large wedges. Add to a glass bowl and drizzle with EEVO. Sprinkle with black pepper, salt, paprika and stir. Spread potatoes on a baking sheet.
Lay asparagus on a piece of foil and drizzle lightly with EEVO. Add a dash of pepper and seal the foil tightly.
Put everything in the oven and bake for 40-50 minutes. Remove foil from ribs and coat with your favorite BBQ sauce. Continue baking uncovered for 10-15 minutes and serve this easy, delicious dinner.
Tip: Cook two slabs of ribs at the same time and freeze one for another meal. They heat up easily in the oven, and are perfect when you’re short on time.
