Ice Cream – A Healthy Treat!

Simple ingredients, delicious results.  Here are three varieties of this favorite dessert—so easy, you’ll be tempted to have it every night …

Ingredients:
3 – organic bananas
½ tsp organic Ceylon cinnamon
1 tsp vanilla
1/3 cup coconut milk
Raw organic unfiltered honey
Raw organic cacao

Recipe #1 – Simple Banana Ice Cream
Slice bananas and assemble on a plate or pan. Freeze for 1-1/2 hours. Using a food processor (I use a Ninja Mini-Prep), combine frozen banana slices, cinnamon, vanilla, and coconut milk. Pulse until combined, then process on high speed until smooth and creamy—about a minute. Pour mixture into a freezer-safe container (click here for my favorite), cover, and freeze for 1-1/2 to 2 hours. Scoop and serve!

Recipe #2 – Chocolate Chip Banana Ice Cream
This one was born out of necessity when a last minute dinner invitation included a request to bring dessert. Fortunately, I had Chocolate Banana Buttons in the freezer, which made a nice bite-size treat. But I wanted to offer another option …

Put 16-20 frozen Chocolate Banana Buttons and coconut milk in a food processor. Pulse until bananas and frozen chocolate are broken up. Then process on high until achieving the desired smoothness and size of chocolate chips. Spoon into a freezer-safe container, cover, and freeze for 30-45 minutes.

Recipe #3 – Cacao, Honey, and Banana Ice Cream
Follow the recipe for Simple Banana Ice Cream above, and add raw organic cacao in the processor with the other ingredients. Process until smooth and creamy and pour into a freezer-safe container. Drizzle honey on top and swirl in with a spoon. Cover and freeze for 1-1/2 to 2 hours and serve. Do your best not to eat the whole thing in one sitting …
