Green Chili and Feta Chicken

We eat a lot of chicken in our house, so I’m always looking for new ways to prepare this favorite meat. This recipe evolved when some friends came into town and hubby invited them over for dinner, before consulting the chef. No worries though. After a quick inventory check, I created this dish to rave reviews—and no leftovers. I learned my lesson, and now when I prepare this meal, I always make a little extra. It stores and freezes well, and a quick reheat in the oven brings out its delicious flavor.

Ingredients:
Four skinless boneless chicken breasts, cut into 2” strips
Kitchen Spirit Coating  (Click Here for the recipe)
Kitchen Spirit Green Chili Sauce (Click Here for the recipe )
Feta cheese
Organic coconut oil
Dried organic red chili flakes
Organic pepper

Prep:
Preheat oven to 325 degrees. Add Kitchen Spirit Coating to a shallow dish and dredge the chicken. Heat coconut oil in a skillet and add strips. Brown lightly, about five minutes on each side.

Brush a metal baking pan with oil and arrange chicken pieces. Cover the entire pan with foil, tucking in the sides and edges for a good seal, and bake for 30 minutes. Remove foil and pour KS Green Chili Sauce over the chicken, using as much or as little as you like. Sprinkle with feta cheese and a pinch or two of dried red chili flakes. Bake uncovered an additional 10-15 minutes until heated through

 

Feel like experimenting? Below are a few variations to try:
Prepare the breasts whole or use thighs. I’ve served this recipe with both strips and whole chicken parts. Either way, it disappears with a smile.

Use garlic-infused extra virgin olive or avocado oil to bring a new flavor to this dish.

Spices:  We like it hot at our house, and if your preference is for a milder flavor, it’s easy to substitute other herbs and sauces. Try basil and oregano with marinara for an Italian flair, or ginger and orange sauce for an Asian-inspired dish.

Feta:  Change it up with other varieties and customize to your family’s taste buds. As always, cheese is optional.
