Great for breakfast or a quick and healthy dessert – any day of the week!
A friend of mine told me she loved blueberries, but didn’t like eating them “in the raw.” So she asked if I would come up with a healthy recipe incorporating this nutrient-packed berry to start off her day. This has become one of my favorite breakfast go-to’s – hope you give it a try:
Coat an 8 x 8” glass baking dish with coconut oil. Arrange the blueberries on the bottom of the pan and sprinkle with cinnamon. In a separate bowl, add mashed bananas and eggs, and combine. Add almond flour and baking powder and mix well. Drizzle in honey and stir. Pour mixture over blueberries and bake at 330 degrees for 45 minutes.
When cool, cut into twelve pieces and enjoy! You can also store the extra pieces (if you have any . . .) in the fridge or freezer (yep – these freeze great!) and reheat (microwave for 1 minute at 80% power) for your next breakfast treat.
