English Pea Salad
When my husband and I were first dating, I discovered English Pea Salad was one of his favorite dishes. Every time we visited a salad buffet, his plate always had a sizeable helping. I knew I would have to create a recipe he loved. So far, so good . . .
Ingredients:
4-slices of uncured turkey bacon
1-pound frozen (unthawed) peas
½ red onion, sliced or cut in pieces as preferred
2-hard boiled eggs, shelled and chopped
1-tablespoon fresh-squeezed lemon juice
¼ cup light mayo
¼ cup light sour cream
Organic lemon pepper to taste
1-tsp organic basil
2-3 ounces shredded or grated white cheddar
Half a diced yellow bell pepper (for a little more color and crunch)
Prep:
Boil the eggs until hard. When cool, slice/chop and set aside
In a large skillet, cook bacon until browned and crisp. Remove from pan and drain. When cool, cut/break into small pieces or strips
Whisk mayo, sour cream, and lemon juice in a large bowl; season with lemon pepper and basil. Add peas, chopped eggs, bell pepper, and onion.
Gently fold in cheddar and bacon
Serve immediately or refrigerate in an air-tight container
