Classic Meat Loaf
No longer a default dinner, meat loaf has risen to the top of the list in healthy meal choices. Using ground organic turkey with organic spices and ingredients, this recipe provides a quick, protein-packed dinner with tons of possibilities. Pair it with Scalloped Organic White Sweet Potatoes or Sweet Potato Wedges and Carrots and drizzle with Kitchen Spirit Green Sauce for a hearty, nutritious dinner.
Ingredients:
1-lb organic ground turkey
1-range-free egg
½ cup chopped mushrooms
1-tbsp organic paprika
1-tsp organic chia seed
1-tsp organic dried basil
1-tsp organic dried cilantro
Coarse black pepper to taste
Preheat oven to 325 degrees. Put ground turkey in a medium size bowl and add paprika, sprinkle of pepper, basil, and cilantro. Mix through with a fork. Add the egg and blend into meat. Then add chopped mushroom and chia seed, and work into the ground turkey mixture. If the meat is too moist, cover and put in the fridge for 20-30 minutes. The chia seeds will absorb some of the moisture and you’ll be able to work it easier.
Split the meat into two portions and form loaves. Place them in a square baking dish and cover with foil. Bake in the oven at 325 degrees for about an hour. Remove pan and foil. Put one of the loaves in a storage container and pop it in the freezer for another meal.
Slice the remaining loaf in ½” slices and serve with Scalloped Organic White Sweet Potatoes and Kitchen Spirit Green Sauce. Sprinkle with grated reggiano-parmigiano cheese (optional).
This recipe feeds 2-3 per loaf.
Variations:
For a one-pan meal: Preheat oven to 350. Peel and cut 1-organic white sweet potato into wedges. Chop 2 – organic carrots into medium size pieces. Toss the potatoes and carrots with garlic infused olive oil, coarse black pepper, dried basil, and dried red chili pepper flakes. Spread on a medium size sheet pan and bake for 30 minutes.
Remove pan from oven and clear a space in the center for the two meat loaves. Sprinkle with grated reggiano-parmigiano and cover with foil. Bake for 45-60 minutes.
Slice the meat loaf and serve with potatoes and Kitchen Spirit Green Sauce. Store and freeze the other loaf for next time!
