Banana Peach Ice Cream
Some friends of ours had spent a weekend at the beach. They shared stories of their walks along the shore, snacks in the open air restaurants, and a visit to an ice cream shop for a “sampling” of the 40+ flavors offered. My mouth began to water at the choices (ice cream is a weakness of mine), and I began thinking about how to quench my ice cream fix with a healthy option.
Using a couple pieces of fresh fruit and ingredients on-hand in my pantry, this delicious dessert came together easily. Make it a few hours ahead of time for an after-dinner treat!
Peel and cut the banana and peach into small pieces and put in the Ninja. Add cinnamon, honey, and coconut milk and process until smooth. Pour into a freezer-safe container and chill for 2-3 hours.
Top with sliced strawberries or cherries and enjoy this sweet, flavorful dessert without all the additives and preservatives.
