Apple Blueberry Bundt Cake
Try this easy, delicious cake recipe using fresh, organic ingredients and a few staples from your pantry. Takes only a few minutes to prepare, and with baking time, about an hour overall from start to finish.
1-3/4 cup almond flour
½ cup blueberries
2 – bananas
6-free range eggs
2-tsp baking powder
½ tsp salt
½ tsp cinnamon
2-tbsp raw unfiltered honey
Preheat oven to 315 degrees. Grease the bundt pan with coconut oil. Peel, slice, and chop the apple into small pieces and set aside. Mash bananas in a large bowl. Add eggs, honey, and vanilla and mix together.
Combine almond flour, baking powder, salt, and cinnamon in a measuring cup. Stir dry ingredients into mixture. Add apple pieces and blueberries to batter and pour into the bundt pan. Bake 45-55 minutes until golden brown.
Cool before removing from pan. Easiest method is to place a large plate over the top of bundt pan and turn upside down, tapping the sides gently.
This tasty cake is ideal for breakfast with a side of fruit. Need an after-dinner dessert? Serve with a few fresh blueberries to round out the meal.
To freeze, cut into slices and store in an air-tight container.
